Without knowing beforehand, I put this Taco Hand Pies recipe on the menu for the week that brings us Pi Day. I had put it on the menu for the day after but did a quick switcheroo with my Bean Burgers to be able to enjoy Pi Day with these Taco Hand Pies.
Despite not eating these on Taco Tuesday, this is an excellent dish for your next Taco Tuesday. The original recipe called for premade pie crust. I decided to make my own (recipe here), which I am very glad I did. (Huge money saver for me!)
At first, I thought the size would be too small using a can to shape the pie dough. It turned out to be the perfect size for me. I didn’t make enough pie dough to use all my filling and froze the extra filling to make at another time.
These turned out well. I would have like a little something extra with mine. I think more cheese in the filling and salsa for dipping. I found it to be a bit too dry otherwise. The filling flavor tasted good otherwise. I just really like cheese and always want more.
The pies were also the right size to hold and eat. It only took a few bites to devour it, which is what you’re going to want to do, especially if you have salsa on the side. I will obviously be putting this on the menu again as I have frozen filling taking up my freezer. Yum!
I highly recommend putting this on your menu for a Taco Tuesday. These Taco Hand Pies will not let you or your family down. They’re also a great size for your kiddos or a sports party!
