Recipe: Slow Cooker Macaroni and Cheese

Macaroni and Cheese has been one of my favorite foods practically my whole life. I have loved and enjoyed the stuff out of the blue box for as long as I can remember. As an adult, however,  have been dying for a good homemade recipe for macaroni and cheese. Which is where this Slow Cooker Macaroni and Cheese comes in handy.

I can’t remember if I found this first on Foodgawker or on Pinterest. But I saved it in hopes of making a good macaroni and cheese. From the pictures, it looked exactly like what I wanted. Something a little creamy but with a little bit of that almost curdled texture. It’s hard to explain the exact texture. If you’re not a fan of true southern-style macaroni and cheese, then you won’t care for this.

This recipe was extremely simple to make. The crock pot really takes the work out of having to stare at stove and work up a béchamel sauce. Once you mix and dump it all in the crock pot, you can all but forget about it for three hours. My crock pot was a little bit bigger than the one used in the original recipe and I still had no problems with cook time.

I am a big fan of Barilla pasta. When I shop at the store, I go straight for their pasta when available. My favorite part is their ingredient list. I can actually pronounce the ingredients which makes me feel a lot better when feeding it to my growing boy. Which is why I used Barilla Elbow Macaroni Noodles in this dish.

FAMILY REACTIONS?

This slow cooker macaroni and cheese was a big hit with the whole family. I loved it and scarfed down my entire bowl. Mr. H said it was exactly the type of macaroni and cheese he wanted for a homemade version. And even little C ate most of the serving I gave him. (You can count that as an entire serving, mommy accidentally put too much in the bowl! Oops!)

VERDICT:

I will definitely be making this recipe again in the future. It was perfect. No, it’s not going to stop me from trying other recipes, but at least now I know I have one good recipe in my book. I highly recommend giving this recipe a try. It is simple and super family friendly, even for picky toddlers.

Slow Cooker Macaroni and Cheese

Slow Cooker Macaroni and Cheese

Ingredients

  • 12 oz (or 2 heaping cups) uncooked elbow macaroni noodles
  • 1 12-oz. can evaporated milk
  • 1 1/2 cups milk
  • 1/2 cup sour cream
  • 2 eggs, beaten
  • 1 tsp salt
  • 1/2 tsp dry mustard
  • 1/2 tsp white pepper (or black pepper if you don't mind seeing the black pepper in your dish)
  • 1/4 tsp cayenne pepper
  • 4 tbsp (1/2 stick) butter, melted
  • 16 ounces cheddar cheese*, shredded and divided (about 4 cups)

Instructions

  1. Boil noodles in liberally salted water for 5 minutes then drain well.
  2. Do not cook noodles longer than 5 minutes.
  3. While noodles are cooking, combine evaporated milk, milk, sour cream, eggs, salt, mustard, white pepper and cayenne pepper in a large bowl and mix well.
  4. Add parboiled noodles, melted butter and 3/4 of the shredded cheese to the milk mixture and stir until thoroughly combined.
  5. Spray the inside of a medium-large crock pot (approximately 4-qt size) with cooking spray.
  6. Pour macaroni mixture into crock pot.
  7. Top with remaining cheese.
  8. Cover and cook on low for 3 hours or until set in the center and golden brown around the edges.

Notes

*Sharper cheese is less creamy. I used medium cheddar in this recipe and it was deliciously creamy without losing any of the cheese flavor.
