Meal Plan Friday: 5/20/2016

Another week down. Another Friday come and gone. And time for another Meal Plan Friday.

I’ve been getting a little lazy lately and feel completely uninspired. Little man decided to hit a sleep funk and it’s giving me a sleep funk and killing all motivation. Oh well.

We’ll get back in the groove and I’ll just keep our plan simple for a little while to help build up the motivation again. (I’ll also take any pointers you have for keeping the motivation for fun and creative meal cooking!) I may also look into bringing back some freezer cooking. It involves a lot of work one day out of the week, but the amount of food to have is fantastic. (Plus much less work when it comes to making the meal.)

Mr. H has been talking about wanting to use his electric smoker, so I decided to let him take the reigns for a meal and smoke some meat. It will probably be a pork butt, but he’s been going back and forth on also smoking ribs. So we’ll see what he ends up deciding. (I’m hoping for pork butt. It gives us meat for days and it’s easy to freeze and pull out for a meal later!)

And on that note, let’s kick off another simple meal plan to help get my motivation back!

  • Sunday:
    • Breakfast: Cereal
    • Lunch: Leftovers
    • Dinner: Smoked BBQ (meat TBD) + Coleslaw
  • Monday:
    • Breakfast: Sausage and apples
    • Lunch: Sandwiches
    • Dinner: Salads
  • Tuesday:
    • Breakfast: Eggs, Grapes, Ham
    • Lunch: Leftovers
    • Dinner: Pot Roast
  • Wednesday:
    • Breakfast: Bacon, apples, yogurt
    • Lunch: Macaroni and Cheese/Leftovers
    • Dinner: Baked Fish + Asparagus
  • Thursday:
    • Breakfast: Pancakes
    • Lunch: Salad
    • Dinner: Tacos
  • Friday:
    • Breakfast: Sausage and Eggs
    • Lunch: Leftovers
    • Dinner: Grilled Chicken + Roasted Veggies
  • Saturday:
