Italian Sausage with Peppers and Onions

This is one of my favorite meals to make. Depending on how much you want to make, the prep can take quite a bit of time. But it is always worth it. I first made my version of Italian Sausage with Peppers and Onions on a whim after seeing it made on TV.

The show I saw the dish on was not a normal cooking show. It actually was a trashy reality show that I’m a bit ashamed to admit I watched. (OK, I’m a big sucker for trashy reality TV. This includes things like Jersey Shore, which is where I got the idea for the dish.)

OK, now you know one of my deep, dark secrets. Back to the food! I’m not sure what prompted me to try this dish. Maybe I was fascinated that these guidos, who for the most part seem like total idiots, can make edible food. I thought, if they can do it, why can’t I?

So I set out to make this dish for myself. I didn’t look up any recipes. I just went with what I thought I needed and it worked well for me. This may not be an authentic Italian version of sausage and peppers. However, my family enjoys it and that is all that matters.

You can easily vary the seasonings and amounts of each ingredient to your own tastes. That is one of my favorite things about this dish. Normally I make at least double what is in my recipe but I was feeling a little cheap and only bought a small package of sausage this week.

Leftovers????

I also find this dish to be great as leftovers. You can also serve it over mashed potatoes which is just heavenly or eat it as is. I have done both and cannot argue one over the other.

Italian Sausage with Peppers and Onions

Ingredients

  • 5 Italian Sausage Links
  • 2 Small Green Bell Peppers (or 1 medium-large), cut into slices
  • 1 Medium Onion, cut into slices
  • Extra Virgin Olive Oil
  • Salt
  • Pepper
  • Chili Powder
  • Garlic Powder
  • Basil
  • Oregano
  • Paprika

Instructions

  1. Preheat oven to 350F.
  2. Heat oil in large skillet over medium heat.
  3. Add peppers and onions to skillet with oil.
  4. Saute until tender.
  5. Add spices. (How much is up to your personal tastes.)
  6. Mix and cook a couple more minutes.
  7. Place pepper/onion mixture in a baking dish.
  8. Brown sausage in pan. (Can use same pan or different. Sausage only needs to brown, not be cooked all the way.)
  9. Place sausage over peppers and onions in glass dish.
  10. Bake for 60 minutes, flipping sausages half way.

  1. This looks so good! One of my favorite foods to eat! I usually eat it with a nice crusty soft roll with mustard and ketchup.
