It’s no secret that I love a good casserole. I feel casseroles fit all my cooking needs: easy to make, easy to give the kiddo attention while I cook, and filling. Plus, this Italian Casserole also happens to low-carb friendly!

Pasta of all types is one of my favorite things to eat. I could probably eat it everyday if the rest of my family liked it as much as I do. But they don’t, so I try to get my fix for pasta-like things that don’t actually involve the high-carb fiend.

This casserole is fantastic. It’s meaty, cheesy, and has a great tomato flavor. It hits all of my favorite flavors (except for the pasta!) But that is exactly what this dish is. It’s like deconstructed meatballs, really good meatballs. I liked this so much that I ate two large servings… oops! Well, not really oops because it was delicious and worth every extra bite.

I couldn’t get the baby to try it, but dinner is not his favorite meal. Mr. H, on the other hand, also really enjoyed the dish. He even requested more meals like that. So that is very high praise. I don’t think I could have done better if I made one his already favorite meals.

This dish will definitely go back on the menu. I may even get a little crazy and serve it over pasta, well, at least for myself. You should put this on your next low-carb meal plan. You will not regret it.

Ingredients

    For the Filling
  • 1 pound ground beef
  • 1/2 pound Italian sausage
  • 1 clove garlic, minced
  • 2 tablespoons onion, chopped
  • 1/2 pound fresh mushrooms, sliced
  • 8 ounce can tomato sauce
  • Salt, to taste
  • 1/8 tsp pepper
  • 1/4 tsp Italian seasoning, or to taste
  • 4 oz mozzarella cheese, shredded, 1 cup
    For the Topping:
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper
  • 1/2 cup freshly shredded Parmesan cheese (the stuff in the can also works well)
  • 4 oz mozzarella cheese, shredded, 1 cup

Instructions

  1. Preheat oven to 350F.
  2. Brown the meats along with the garlic, onions and mushrooms.
  3. Season with a little salt and pepper.
  4. Drain fat.
  5. Stir in the remaining ingredients.
  6. Adjust the seasoning if necessary and put in a greased 7x11 baking dish.
  7. Combine the topping ingredients.
  8. Spoon topping over the surface of the meat mixture.
  9. Spread evenly with a spatula.
  10. Bake at 350F about 40 minutes, until the topping is nicely browned.
