Gilmore Girls Inspired – Rustic Apple Tart

With just one week left until the premiere of Gilmore Girls: A Year in the Life, I have been trying to decide on something special to make in celebration of this event. I made a reddit post awhile back asking about favorite Gilmore foods. I finally decided to have my go at making a Rustic Apple Tart.

For those that are also die-hard Gilmore Girls fans, you’ll remember how famous apple tarts are. (And that Lorelai has a song about them we haven’t heard! I’m still dying to hear the apple tart song.)

I’ve been secretly counting down the days to A Year in the Life (8 days!). My excitement for the Amy Sherman-Palladino closure we’ve all been craving is hard to control. And although I’m not a fan of apple desserts myself, I thought it would be a great way to celebrate only having one week left.

As I don’t have a recipe of my own, I scoured the internet for recipes. After reading more apple tart recipes than I care to admit, I finally decided to combine a few recipes to make my first apple tart. (Dangerous, I know!)

For my first try, I think most of this went pretty well. One thing I do want to change is brushing some melted butter around the crust. Adding powdered sugar as a topping actually made this dish enjoyable to me. I think even Lorelai Gilmore would appreciate this Rustic Apple Tart.

Gilmore Girls Inspired – Rustic Apple Tart

Ingredients

    For the Crust
  • 1 1/2 cups All-Purpose Flour
  • Pinch of Salt
  • 12 tbsp Unsalted, Cold Butter (1 1/2 sticks), cut into small pieces
  • 1/3 cup Ice-Cold Water
    For the Filling
  • 3 Granny-Smith Apples, cored and peeled
  • 4 tbsp Brown Sugar
  • 1/2 tsp Cinnamon
  • 1/2 tsp Nutmeg
    For the Glaze
  • 2 tbsp Honey
  • 1/2 tsp Vanilla

Instructions

    For the Crust
  1. Place flour and salt in food processor.
  2. Pulse a few times to mix.
  3. Add butter and pulse until butter is pea-sized.
  4. Sprinkle water on top.
  5. Pulse until dough turns wet, about 5 seconds (Note: dough will look crumbly)
  6. Turn dough out onto lightly-floured surface.
  7. Knead to combine.
  8. Hand-shape dough into a disc.
  9. On a lightly-floured surface, roll dough out to 1/4-inch thickness (~15-17inch diameter).
  10. Line an unrimmed baking sheet with parchment paper.
  11. Transfer dough to baking sheet.
    For the Filling
  1. Combine brown sugar, cinnamon, and nutmeg.
  2. Sprinkle 1 tbsp of mixture over dough.
  3. Slice apples thinly and evenly.
  4. Place apple slices overlapping on dough, making circular shapes as you work from the outside in. (Note: leave an inch or two of space between apples and edge of dough.)
  5. Sprinkle remaining sugar mixture over apples.
  6. Chill 10 minutes.
  7. Preheat oven to 400F.
  8. Fold edges of dough over apples slightly.
  9. Bake in oven 30 minutes to 1 hour, until dough is cooked through and apples are tender.
    For the Glaze
  1. Combine honey and vanilla in small bowl.
  2. Heat in microwave 40 seconds.
  3. Brush over tart.
