Creamy Mushroom Pork Chops

Sometimes you get an itch to put a protein on the menu that you just don’t eat very often. It happened to me and I ended up with two types of pork meals on the menu for the week. This one looked spectacular plus it also had mushrooms. (I love, Love, L-O-V-E mushrooms!)

I don’t have much experience with pork in the slow cooker, but I had high hopes for this recipe. It paid off. The pork was well cooked and tender. Just the way we like to eat it. (It’s just so hard to find pork that’s cooked through and still tender and moist!) I cut the portion in half for my family in case it turned out like the last slow cooker pork dish I tried. And I served it over broccoli, a brilliant choice in my mind.

I loved this enough to eat two full portions. Mr. H doesn’t usually like pork because it’s too bland, however he enjoyed this with the sauce. And the baby wouldn’t try it (still on his anti-dinner kick.) I was a little disappointed he didn’t try it, though.

The sauce is delicious. I wanted to bathe in it. (Ok, not really, but you get the idea!) And in my house, it’s saying a lot if Mr. H likes a sauce on his food. He’s a simple meat and veggie kind of man.

It’s safe to say, this will be back on our menu again! It’s making me hungry just thinking about it again and I just downed a big bowl of cereal! Also, this can be prepared as a freezer meal. If you opt to make it right away, just skip the part about separating the pork and freezing it. Dump it all straight in the crock pot and go to town!

Creamy Mushroom Pork Chops

Ingredients

  • 8 pork loin chops (regular or thick–not thin cut)
  • 1 large sweet onion, chopped
  • 2 cans condensed cream of mushroom soup
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 8oz. package sliced mushrooms, rinsed well
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Whisk together mushroom soup, olive oil, and chicken broth; stir in mushrooms, onions, and spices.
  2. Divide pork chops into 2 gallon size freezer bags ( be sure to label bags first.)
  3. Divide cream of mushroom mixture over pork chops.
  4. Thaw if frozen; cook in crockpot on low for 4-6 hours or high for 2-3 hours, until pork is fully cooked.
  5. Be careful not to overcook–this is not a recipe that should be left to cook all day!
