Cinnamon Crumb Banana Bread

Bananas are something I tend to avoid eating.. Generally speaking, I can’t stand the things. There is something not right with the fruit and my brain just can’t wrap itself around trying to eat bananas. Except when it comes to Banana Bread.

I loooooooooove banana bread. I saw this recipe pop up on my Pinterest and decided that I had to give it a try. It combined two of my favorite things: banana bread and sugary sweet crumb topping.

RESULTS:

I did enjoy the end result of this recipe. My only issue is that you really have to be careful with your cook time or your middle will come out not cooked. I tried very hard to avoid this and still came up short with a mushy, gooey, icky, uncooked center.

TOPPING:

In the comments on this post, someone stated that there was not enough crumb topping. I found this to be rather silly. I had more than enough of the crumb topping to put a nice thick layer on top.

Cinnamon Crumb Banana Bread

Ingredients

  • 1 egg
  • 1 cup sugar
  • 1/2 cup unsalted butter (at room temp)
  • 1 tsp vanilla
  • 1/2 cup buttermilk
  • 2 overripe bananas (mashed)
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • optional: chopped walnuts
    Crumb Topping
  • 1/2 cup powdered sugar
  • 1/2 cup all-purpose flour
  • 4 tbsp unsalted butter (melted)
  • 1/2 tsp cinnamon
  • pinch of salt

Instructions

  1. Preheat oven to 350F.
  2. In a large bowl of a mixer, fitted with paddle attachment, beat together the sugar, egg, and vanilla until combined. (I don't have a mixer, I just did this with a spoon and mixed it myself.)
  3. Add the butter and beat until smooth and the butter is fully incorporated. (I broke out my hand mixer for this.)
  4. Beat in the buttermilk and bananas. (Again, I continued with my hand mixer.)
  5. In a separate bowl, mix together the flour, salt, baking soda, baking powder, and cinnamon.
  6. Slowly stir dry ingredients into the wet until all the flour is incorporated.
  7. Spray a loaf pan with non-stick spray and pour in the batter. (Make sure to leave yourself an inch or two at the top if you notice you have too much batter for your loaf pan.)
  8. Make the crumb topping by combining powdered sugar, flour, cinnamon, salt, and melted butter. Using your hands, crumble the mixture over the batter in your loaf pan.
  9. Bake 45-50 minutes or until a toothpick comes out clean.
