The beginning of the new year brings around some fun things to celebrate for me: my son’s birthday party and top posts of 2015. I love that these two things allow me to start the new year off on some really positive notes.
C-Man decided to make his way into the world at the beginning of January, adding to the plethora of January birthdays in our families. Unlike his cousin, who also has a January birthday, he chose to avoid anyone else’s birthday and not share it with any other family member. Silly kid.
We celebrated C-Man’s birthday on a Saturday to allow as much family as possible to join us and still have time to relax before going back to work on Monday. Unfortunately, his cousins and their parents couldn’t make it to the party so we only celebrated with grandma and pap.
Birthday parties. It’s hard to decide on what to do at this age. He’s young enough that activities aren’t necessary but old enough to make some cute memories. I decided to go with a simple theme. I loosely based it on my Christmas Eve box theme of Ninja Turtles. We had personal cakes covered in a lovely green frosting. (One day, I won’t be so horrible with my actual frosting skills.) I put up the happy birthday banner from last year and hung a few streamers. I tried to make some to match the green with each color for the four turtles, but the chair I needed to use to stand on broke before I could finish. So we only had partial decorations. Luckily at his age, he won’t remember and we have some precious photo memories of the day.
2015 was a fun year. I finally moved my blog from Blogger to being hosted here on my own site. It was one of the best things I have ever done. WordPress has been fantastic to work with, especially being able to schedule these posts and keep the content rolling. I haven’t been perfect by any means at getting posts ready ahead of time, but this host has definitely helped.
I know I haven’t had too many return visitors yet and that is one of my goals for 2016. But I have been overwhelmed already by the amount of people visiting my site already. Thank you to anyone new to the site and thank you to everyone returning and constantly reading my posts. And to celebrate 2015 and all the fun I have had with the site, here are the TOP 3 POSTS from 2015.
I loved making this dish so much. It was a treat and a huge comfort to take one of my favorite frozen dinners and make it in my home just as easily as running to the store, buying it, and throwing it in the oven. It was even my choice for C-Man’s birthday party lunch which was surprisingly enjoyed by all.

I am not surprised that this made my list of top posts for the year. It is delicious and simple and most importantly, it is healthy!
